My name is Cindy Angeli. I am the Head Baker of Bike Stop Bakery®. When I retired from teaching preschool, I decided that it was time for a new adventure. I've always loved baking and I've always loved working with people. It was very important for me to be passionate about what I was doing to really care.
My grandmother was a cook/baker at St. Mary's School for Girls during the Depression. When I had my children, I used to tell them stories about grandma Wilhelmina baking bread and all kinds of good stuff. We would always make bread, hand them the dough, let them just play with the dough to be part of the experience.
I was a member of Team Bike Stop bike club for quite awhile. And I knew Jodi and Tony and I knew the establishment. So I heard that they were looking for an assistant baker. I went and talked with Jodi and there was an instant rapport with both of us being teachers. We had the same values. We put the same emphasis on human kindness and helping others. So I said, you know, I think I might be able to create a Sourdough bread line for you and some other yummy things.
I've learned a whole lot. Luckily I've been making vegan bread at home for the last 10 years or so. Each one of these recipes that I've created is not something that I just printed. I've had to adapt, I've had to change not only to the food restrictions that some people have, but to your environment, our environment at the bakery.
To me, I think making bread and baking is really a love language. I love to bake bread, not just to eat, but just to make people feel like they're special.
